The wheat loaf is made with Malmgård’s emmer and regular wheat, and the rye is 100% Malmgård rye. Just good flour, time, and a whole lot of care. Our sourdough starter has been with us from the very beginning — 6 years now — and somehow, we’ve still never named it. Feels like it’s time. Got a name idea for our trusty starter? Drop it in the comments — we’d love to hear what you’d call it.
We make our main dessert from Suippo punajuuri — We make our main dessert from Suippo punajuuri — Cylindra beets grown just down the road in Majvik, like all our root veg. First, we roast them until they’re collapsing into themselves, then blend them with nutty brown butter until smooth and silky. That becomes the base of our beetroot cake. It’s sweet in a natural way, with a soft, warm centre and a flavour that really lets the beet shine.

Ravintola Skörd Fredalla on lähiruokaa parhaimmillaan.
Kaikki ravintolan raaka-aineet ja juomat tulevat rakkaasta kotimaastamme Suomesta, 
eli ei löydy pippureita tai avokadoja toiselta puolelta maapalloa.

Keittiössä Anton ja Jon loihtii ainoastaan kotimaisista sesongin parhaimmista

 ja mahdollisimman läheltä tulevista raaka-aineista 7 ruokaljin illalisen.

Vältämme kaikkea tehotuotettua joten käytämme paljon riistaa, villikaloja, villiyrttejä,

 sieniä, marjoja ja lähitiloilta juureksia. Hapatammalla, 

kuivattamalla ja pikkelöimällä saamme talvea varten säilöttyä satokauden raakaaineet.
